This next recipe comes from one of our newest writers, Tina Irion. When this recipe was submitted, all we could hear is “Chef” from South Park singing “suck on my [peanut butter sticky] balls. Just put them in your mouth and suck’em”. Regardless of the name, these are sure to be a hit with your rave family when you’re camping.
Peanut Butter Sticky Balls
- 1 cup crunchy salted peanut butter
- 1 cup rolled oats
- 1/2 cup unsweetened shredded coconut
- 1/4 cup almonds
- 3/4 cup raisins or golden raisins
- 1/4 cup maple syrup
- 1 tbsp honey
- 1/2 tsp vanilla
- 1/4 tsp ground cinnamon
Put oatmeal, almonds, and coconut in the blender to chop up a bit finer. Dump and scoop everything into a medium bowl, stir and mix, and then roll into little balls. Place in the fridge and let sit for half a day so the oatmeal absorbs some of the moisture of the peanut butter. You can eat them right away too. Also, in order to maintain their shape, you might prefer to store them in the fridge, depending on the season. But they won’t go bad over a weekend outside, so they’re great for camping. This makes 18 or so little balls.
